And so it’s 2013…

Happy New Year!

So it’s 2013 and so many people are saying ‘New Year, New Start’ or ‘New Me’ and I really hope those people choose to look at Slimming World, because I don’t feel the need to aim for a new me anymore. I am so happy with the plan at Slimming World that I am simply going to aim for a thinner, more confident me, nothing ‘new’ about that!

If anyone reading this feels like giving it a go, check the Slimming World  website (www.slimmingworld.com) to join online (USA too!) or for your nearest group. Orrrrrr just come all the way to Eastern Green, Coventry to my amazing Group Consultant, Helen!!

Anyway… I did ok over Christmas week and lost a pound (yey) hooooooowever, I have not been so good over the week between Christmas and New Year and I am pretty sure I’ve piled on the pounds. We’ll see at weigh in tomorrow. I’m not going to let it bother me though; I’ve drawn a line under it and am back on it and more motivated than ever to do well.

I am currently around half a stone (depending on how much my gain is this week) away from my first target, and I really want to get to that by my birthday in March, but I wanted to start the year with a sort of tally of how it’s been so far…

Goal 1: Lose 1 st 8 lbs
Date of 1st Weigh In: 27.9.12
Current Loss:  1 st 2 lbs (as of last weigh in on 27.12.12)
Lbs until Goal: 6 lbs

Then I will move my goal… I would like to be under a certain number on the scales, but slowly does it right?! I’m quite happy with that now I’ve written it out! 🙂

I’m going to do my best to keep up with blogging my recipes and helpful hints and other rambly nonsense I usually blog…  But now I’m off to blend my super speed soup in a last minute attempt this week!

Christmas Week…

Well, I got through Christmas week fairly well, which I am happy about! I ate lots, but not lots of crap, and I managed to lose 1 lb!! Wooooo!! I hope that I can get though New Year with the same mentality!

Sorry for the short and sweet post, I have a lot of housework to get through before New Years Eve… boring facts of real life!

Low Syn Christmas Cupcakes…

So sorry I haven’t blogged in what feels like forever… I haven’t managed to find the time much lately and also, I haven’t felt like I’ve been doing very well with Slimming World until the last week or so, so I had no motivation… That said, I am back with a vengeance 🙂 (even though I’m definitely going to show a gain tonight at group – I’m far too into the Christmas Spirit!!)

Tonight at group is our Christmas Party and we are all asked to bring something low syn for the table. Since I am fairly new to this ‘cooking’ malarkey  I didn’t want to take something that would be revolting, so I went with what I know… CUPCAKES!! I found a recipe online for Slimming World cupcakes that are only 2.5 syns each (perfect) so I am sharing it with you! On the website, they were pink and only had a half strawberry on top… but I went a little festive with them! Enjoy…

Strawberry Santa Hat Cupcakes

How long does it take? 10 minutes prep and 15 – 20 minutes cooking time

How many syns? 2.5 – 3 syns per cake (depending on size)

What do I need? (These quantities make 12 – 16 cakes, depending on size)
– 3 Eggs
– 60g of Low Fat Spread
– 8 tbsp of Artificial Sweetener
– 110g of Self Raising Flour
– Vanilla Essence (a few drops)
– 1/2 tsp of Strawberry Flavouring

For the Decoration:
– Icing Sugar
– Strawberries

What do I do?

Preheat the oven to 180°C/Gas 4 and lay out paper cases in a cake tin.
Whisk together the eggs, low fat spread and sweetener, then sieve the flour and fold it into the mixture, adding the vanilla essence and the strawberry flavouring.

Spoon into the paper cases and bake for 15-20 minutes. Remove and cool on a wire rack.

Mix a few drops of water with the icing sugar, and spoon on the cakes. Place the strawberries on to the cakes and add a little more icing on the tip to make it look like a Santa Hat.

Then… ENJOY THEM 🙂

Scan Bran Chocolate Cake… Yuuuuuuum!!

Bonjour Lovelies… Today I am sharing with you my favourite slimming world treat so far! It’s not for everyone, if you’re not a fan of Scan Bran, you probably won’t like it, but if like me you love it, this is a winner!! Once again, this recipe comes straight from my beautiful Mummy! Thanks Maroon!

Scan Bran Chocolate Cake

Scan Bran Cake

How long does it take? 10 minutes

How many syns? 12 syns for the whole cake OR B Choice + 6 syns for the whole cake

What do I need?
– 4 Scan Bran
– 1 Tablespoon Golden Syrup
– 1 Sachet of Options (Toffee of Fudge Flavour)
– 1 Weetabix
– Half a Mug of Sweetener
– 2 Eggs

What do I do?
Break the scan bran up (as much as you can) the soak in a very small amount of water for a minute or 2 to soften. Drain and mash. Add the syrup, sachet of options, sweetener and weetabix. Beat the eggs together in a separate bowl and gradually add them into the mixture, slowly mixing well.
Microwave for 6 – 7 minutes.

I like to have a little slice with some fruit and a muller light… delicious (well I like it!)

Erm… I’m not sure this weekend was on plan… AT ALL!!

Bonjour lovelies, I hope you are all well!

Last week at weigh in I lost another 2.5 lbs taking my total lost in 5 weeks to 12lbs 🙂 Wooooooooooo! I was chuffed to bits as I worked really, really hard last week, pretty much living of the Super Free Speed Soup and vegetable stir frys! This past weekend however, has NOT been an ‘on plan’ few days!

My beautiful cousin got married over the weekend and as she lives 4 hours away, that meant a weekend away in a lovely hotel for the whole family. This of course means not a lot of syn free options! I was pretty good at breakfasts, having beans on toast and bacon (with no fat!) but the rest of the time was a big fat food fail!! I ate everything from cupcakes to a Chinese take away… I only hope I haven’t undone too much of my hard work! That said, I had an amazing weekend away with my family, and all the syns were more than worth it!!

Now I just need to focus for the rest of the week so my gain isn’t too huge at this weeks weigh in. I thought about not going, but I need to go, if I’ve gained, I’ve gained… I can’t change it, so I’m not going to sit and panic about it now, I’m just going to work hard and minimise the damage as best I can! I’m back on it like sonic already this morning!! 🙂

It’s Friday night and I just want junk food…

You know that feeling at the end of the week when you’ve had a rubbish Friday and you just fancy a take away or some junk food… well today I got that feeling, really bad!! I really craved ‘junk’ but I really didn’t want to go off plan, so much so that I was almost having an argument with myself. I could have had a blow out and eaten a Chinese or a Curry or had a chippy dinner, but then I’d have been really angry with myself and racked with guilt for who knows how long!! Then I remembered a recipe my Aunty had showed me the other day for syn free burgers, which I have never tried to make, but I figured it was worth a go 🙂 Burger and Chips… win!!

Off I went to Tesco, I bought all my ingredients, I got home and I stared at them all and realised I had no clue what I was doing… so I guessed!! Thankfully my ‘junk food’ dinner turned out really well… so I’m going to share it with you!

And again – If I can do it, anyone can!

My Friday night ‘junk food’

For the Burgers:

How long does it take? 15 – 20 minutes prep, 15 mins cooking time

Is it syn free? Yep 🙂

What do I need?
– Extra Lean Minced Beef (I used 500g, which made 4 burgers)
– 2 Shallots (very finely chopped)
– 2 Garlic Cloves (peeled and crushed) (It was interesting trying to do this for the first time!! ha!)
– 4 tbsp Worcestershire Sauce
– Fry Light

What do I do?
Shove all the ingredients in a bowl and using your hands, mix everything together and season. Split the mixture and shape them into flat burgers. Spray them with fry light and either grill or cook in a frying pan… either way cook them for approximately 6-7 minutes on each side.

For the Slimming World Chips:

How long does it take? 15 minutes prep and approximately 30 minutes cooking time

Is it syn free? Yep 🙂

What do I need?
– Potatoes
– Fry Light

What do I do?
Pre heat the oven to 220° C. Peel and cut the potatoes into chip shapes (in real English that means cut them lengthwise into approx ½in/1cm thick rectangular shapes). Bring a large pan of water to the boil, add the chips and cook for about 5 minutes. Leave aside to cool for 10 minutes. When cooled, cover and shake the chips to make them rough around the edges. Spray a baking tray with Fry Light and spread the chips into a single layer, spray them and the bake in the oven for about 30 minutes, until golden brown, turning them occassionally.

Then eat all of this and enjoy!!!

Slimming World Magic Pancakes…

I’ll start this post by saying I am a ‘sweet’ girl! I like sweets and chocolate and puddings, and will always choose something sweet over something savoury… I like the naughty little treats, all the ones you need to avoid when you’re on a diet! Last week someone told us about the Slimming World Magic Pancakes, and my Mum and I gave it a go… Oh my goodness – so good! It tasted like I was eating something ‘treaty’ but it was syn free goodness 🙂 Woo!

If you don’t know about these, below is the very easy recipe for how to make them. Give them a go!

There are about 6 on this plate… the pic isn’t very good and you can’t really see, but they were delicious!!

 

Slimming World Magic Pancakes

How long does it take? A few minutes prep, leave over night and 5 – 10 minutes cooking time the next day.

Is it syn free? Only if using the porridge oats as your Healthy Extra B Choice.

What will I need?
– 1 Muller Light
– 35 grams of porridge oats
– 2 (beaten) eggs
– Sweetener
– Fry Light

What do I do?
Mix the porridge oats in with the muller light and leave them over night in the fridge. Some people only leave them for an hour or so, but I guess that’s down to you 🙂 After soaking the porridge oats (so in the morning or after an hour) mix all the ingredients together and fry in fry light like you would a normal pancake. You can get quite a few small ones from this mix, so they are good for breakfast and to keep for snacks later in the day, or if you’re like me, they are great for puddings!

I top mine with fruit, but I guess you could use pretty much anything… Just remember to count your syns if you’re using something that’s not syn free to top them with.

It’s all about the Super Free Speed Soup…

Last week at group everyone was raving about homemade soups. I have never tried to make soup, but I really wanted to try, so my lovely Mum bought me the Little Book of Soups (thank you Mum!) First thing I did was go out and buy a blender, but not an expensive one, as there was every chance I was going to make a massive mess of this and fail at soup making, and I didn’t want a useless blender! Next on my list was to choose a soup to start with, but I literally couldn’t pick one, so I turned to Twitter and Instagram and settled on the Super Free Speed Soup. A lovely blogger I follow Sophie, shared the recipe with me and I am going to share it with you!!! Sophie’s blog is linked below, check it out!

If I can do it… Anyone can do it!!

With the quantites below I managed to make 6 big portions, and it’s freezable so that’s my dinner for the next week sorted 🙂 The only thing I wish I’d been told before hand is that you need a massive pan, which I do not have, so I improvised with a wok and a saucepan!

Super Free Speed Soup (Thanks Sophie: http://riotsanddiets.blogspot.co.uk/)

How many does it serve? 1 person, for a whole week!

How long does it take?
30 – 45 minutes cooking time, plus prep

Is it syn free? It definitely is!

What do I need?
– 1 can mixed bean salad
– 1 can green lentils
– 2 cans chopped tomatoes
– 1 can baked beans
– 1 handful of split lentils
– 2 large leeks
– 1 large onion or 2 small – medium onions
– 4 medium carrots
– 2 parsnips
– 1 green 1 red and 1 yellow pepper
– 2 vegetable stock cubes
– salt and pepper
– mixed herbs

What do I do?
Chop and put all vegetables in a pan with the rest of the ingredients, cover and bring to boil then simmer until soft. When soft, either blend for a smooth thick soup or you can leave it chunky if that’s how you’d prefer it!

Serve & enjoy the syn free goodness 🙂
