Low Syn Christmas Cupcakes…

So sorry I haven’t blogged in what feels like forever… I haven’t managed to find the time much lately and also, I haven’t felt like I’ve been doing very well with Slimming World until the last week or so, so I had no motivation… That said, I am back with a¬†vengeance¬†ūüôā (even though I’m definitely going to show a gain tonight at group – I’m far too into the Christmas Spirit!!)

Tonight at group is our Christmas Party and we are all asked to bring something low syn for the table. Since I am fairly new to this ‘cooking’¬†malarkey¬† I didn’t want to take something that would be revolting, so I went with what I know… CUPCAKES!! I found a recipe online for Slimming World cupcakes that are only 2.5 syns each (perfect) so I am sharing it with you! On the website, they were pink and only had a half strawberry on top… but I went a little festive with them! Enjoy…

Strawberry Santa Hat Cupcakes

How long does it take? 10 minutes prep and 15 Р20 minutes cooking time

How many syns? 2.5 Р3 syns per cake (depending on size)

What do I need? (These quantities make 12 – 16 cakes, depending on size)
– 3 Eggs
–¬†60g of Low Fat Spread
Р8 tbsp of Artificial Sweetener
– 110g of Self Raising Flour
– Vanilla Essence (a few drops)
– 1/2 tsp of Strawberry Flavouring

For the Decoration:
– Icing Sugar
– Strawberries

What do I do?

Preheat the oven to 180¬įC/Gas 4 and lay out paper cases in a cake tin.
Whisk together the eggs, low fat spread and sweetener, then sieve the flour and fold it into the mixture, adding the vanilla essence and the strawberry flavouring.

Spoon into the paper cases and bake for 15-20 minutes. Remove and cool on a wire rack.

Mix a few drops of water with the icing sugar, and spoon on the cakes. Place the strawberries on to the cakes and add a little more icing on the tip to make it look like a Santa Hat.

Scan Bran Chocolate Cake… Yuuuuuuum!!

Bonjour Lovelies… Today I am sharing with you my favourite slimming world treat so far! It’s not for everyone, if you’re not a fan of Scan Bran, you probably won’t like it, but if like me you love it, this is a winner!! Once again, this recipe comes straight from my beautiful Mummy! Thanks Maroon!

Scan Bran Chocolate Cake

Scan Bran Cake

How long does it take? 10 minutes

How many syns? 12 syns for the whole cake OR B Choice + 6 syns for the whole cake

What do I need?
– 4 Scan Bran
– 1 Tablespoon Golden Syrup
– 1 Sachet of Options (Toffee of Fudge Flavour)
– 1 Weetabix
–¬†Half a Mug of Sweetener
– 2 Eggs

What do I do?
Break the scan bran up (as much as you can) the soak in a very small amount of water for a minute or 2 to soften. Drain and mash. Add the syrup, sachet of options, sweetener and weetabix. Beat the eggs together in a separate bowl and gradually add them into the mixture, slowly mixing well.
Microwave for 6 – 7 minutes.

I like to have a little slice with some fruit and a muller light… delicious (well I like it!)
